RECIPE: BAKED LEMON PEPPER CHICKEN

I'm not sure about you guys, but I have the most difficult time cooking  chicken. I have a fear of salmonella, so I tend to overcook the chicken so it leaves me high & dry! Finally, I have found a way to cook chicken so that it is moist and tender. 

PREP TIME: 5 minutes

INGREDIENTS:

  • Chicken breasts
  • Coconut oil/Spray
  • Smart Balance butter
  • Black Pepper
  • Onion Powder
  • 2 Lemons

YOU WILL NEED:

  • Baking Pan
  • Foil
  • Meat Thermometer

DIRECTIONS:

  1. Preheat oven to 425 degrees
  2. Cover pan with foil & spray/smear with coconut oil & place chicken breasts
  3. Add 1/4 tsp of Smart Balance butter on each chicken breast
  4. Cut 1 lemon into several slices and set aside
  5. Cut 1 lemon in half and juice the chicken breasts 
  6. Add your seasoning: black pepper, onion powder (add your own twist)
  7. Place slices on lemon over chicken breasts 
  8. Pop the bad boy in the oven for 25 minutes
  9. Check with a thermometer to see if the chicken is at 165 degrees or more. If it is, then you are done! If not, then pop it in for another 5-10 minutes in the oven
  10. ENJOY! This is so perfect for meal prepping because it requires less work & dishes
