RECIPE: BAKED LEMON PEPPER CHICKEN
I'm not sure about you guys, but I have the most difficult time cooking chicken. I have a fear of salmonella, so I tend to overcook the chicken so it leaves me high & dry! Finally, I have found a way to cook chicken so that it is moist and tender.
PREP TIME: 5 minutes
INGREDIENTS:
- Chicken breasts
- Coconut oil/Spray
- Smart Balance butter
- Black Pepper
- Onion Powder
- 2 Lemons
YOU WILL NEED:
- Baking Pan
- Foil
- Meat Thermometer
DIRECTIONS:
- Preheat oven to 425 degrees
- Cover pan with foil & spray/smear with coconut oil & place chicken breasts
- Add 1/4 tsp of Smart Balance butter on each chicken breast
- Cut 1 lemon into several slices and set aside
- Cut 1 lemon in half and juice the chicken breasts
- Add your seasoning: black pepper, onion powder (add your own twist)
- Place slices on lemon over chicken breasts
- Pop the bad boy in the oven for 25 minutes
- Check with a thermometer to see if the chicken is at 165 degrees or more. If it is, then you are done! If not, then pop it in for another 5-10 minutes in the oven
- ENJOY! This is so perfect for meal prepping because it requires less work & dishes
